This Little Piggy Went to Market

...with high hopes that her favorite peaches would be ready. They are not. So...
... she bought some Honey Crisp apples, two small eggplants, a small cabbage, another cantaloupe and four ears of corn. 

Wow~ the apples are VERY juicy and tasty! As you probably have guessed, soon I'll make an "easy" parmigiana dish with slaw on the side. 

Here is a tease of the ease.....step #1
Preheat oven to 450°F.

Spray 2 sheet pans with oil. Slice the eggplant lengthwise into 1/4 inch thick slices. Transfer to the prepared pans, it's ok if they overlap slightly. Season with salt. Bake for 20 minutes, turning halfway through until eggplant is golden. To be continued--

Sum! Sum! Summertime!

We took a ride to daughter's so son-in-law could put new front brake pads on car, to see great grandsons, and check out her green thumb garden of today. It was like a jungle with so many wonderful flowers and vegetable plants everywhere and I'll show you a few. We came home with a couple of Oxheart tomatoes with more on the vine. Upon arriving home there were two zucchini beauties waiting for us by the back door. Later on I found out my friend and neighbor dropped them off when she came to visit and found us gone. After returning home I made a large bowl of coleslaw from cabbage that I bought from the farm market last Friday. 
D-licious!

Get ready for colorful sights now.........I have about 20 others of her garden but not showing them yet.
 The boys are really growing too!

By the way, very fresh corn on the cob for supper!

Pretty!

I'm so pretty! I love me! I'm beautiful any way you look at me! I am in GREAT SHAPE no matter your view, AND...

I am the seed producer for next year's crop!
I am pure OXHEART
 My other friends, the yellow squash, green beans and the red beets who were cheerfully delivered today, do not smell as sweet but they are loved as well. They will be sliced and diced - chopped, grated and frozen - dried and fried. Lucky me! The new batch of peaches are feeling cold but soon will wish they were back on the tree!

Food Fairy Struck Again!

A couple of weeks ago a long-time friend stopped in, bringing beautiful fresh lettuce from her garden and a fantastic variety of home canned pickles and other good things. 

Today she came again with garden goodies. We were alerted that she'll reappear later as vegetables in her garden ripen and to expect beets, string beans, carrots and whatever else she has in abundance.
I do have great recipes for zucchini, time to make them, and I know how to make vegetables tasty. Will share if anyone is interested.
Also, I turned down the offer of cherry tomatoes from the Food Fairy as we will wait for the Oxheart tomatoes to ripen. They grow in two of our daughter's gardens.
