The lake has entirely melted and there's not a trace of ice! I'm gonna grate carrots.
Carrot Cake..........
3 C flour
2 tsp cinnamon
2 C sugar
1 1/2 C oil
2 tsp baking powder
4 eggs (5 if not large)
2 tsp baking soda
1/2 C chopped nuts (pecans)
1/2 tsp salt
3C grated carrots
350º 1 hour or more in tube pan. (test with toothpick)
To make it into a fruit cake add any or all:
citron
candied cherries
raisins
sugared fruit rind
chopped dates
Cream Cheese Frosting
1 package (8 oz) cream cheese, softened
1/4 cup butter or margarine, softened
2 to 3 teaspoons milk
1 teaspoon vanilla
4 cups powdered sugar

Carrot Bread……..
• 1/4 cup shortening
• 1 cup brown sugar, packed
• 1 cup water
• 1 cup raisins
• 1/2 teaspoon salt
• 1 teaspoon cinnamon
• 1/2 teaspoon ground cloves
• 1/4 teaspoon ground nutmeg
• 2 cups flour, sifted before measuring
• 1 teaspoon baking soda
• 2 teaspoons baking powder
• 3/4 cup chopped pecans or walnuts
• 1/2 teaspoon vanilla extract
• 1 cup grated raw carrots
Preparation:
In a saucepan, combine shortening, sugar, water, raisins, salt, and spices. Bring to a boil and boil for 3 minutes; remove from heat and let cool. Sift together the flour, baking powder, and soda. Add sifted ingredients to shortening mixture. Add chopped nuts, vanilla, and grated carrots; mix well. Turn batter into a greased 9x5x3-inch loaf pan and bake at 375° for 50 to 60 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
mmmm.....I can smell it cooking! I'll bet it's really moist, too! I'll bring some hot chocolate to go with it!
